Well if you have a W2k3 on one and win2k8r2 on the other you can just setup a 2003 forest on the Domain controller

for project infrastructure it is just Windows 2008 64bit - than for testing (Hudson, Selenium) it will be Ubuntu and some Windows workstation (our laptops).
